Tagliatelle with summer truffle 250g - Maison Brémond
"Tagliatelle" comes from the Italian "tagliare", ie "cut" because they are obtained by kneading long sheets of dough that are cut finely.
These are made in Piedmont, in a small artisanal pasta factory.
The quality of the ingredients used (durum wheat semolina flour, and fresh chicken eggs), respect for the rhythm of drying (very slow process which guarantees great digestibility and excellent resistance to cooking), all monitored and controlled manually , make this pasta an exceptional dish.
You will have the feeling of eating fresh pasta made the same day! and to sublimate them, pieces of summer truffle were added during the preparation of the dough.
Just before serving, a drizzle of olive oil (or truffle oil), or for the greediest, the truffled conté cream, a real feast!!!
